Forlì Sangiovese Sparkling
This wine reinterprets the traditional bottle fermentation, using Sangiovese grapes. Fruity notes, bright colour, it is bottled with a little bit of sugar residue that ferments on the yeasts. Great as an aperitif wine.
Sparking – Serve Chilled – Unfiltered
Soil: Sandy with permanent grassing
Growing form: Guyot
Yield per hectar: 9 tonnes of grapes
Vinification: Stainless steel fermentation with controlled temperature, 3 days maceration with the skins, followed by fermentation in the tank until the wine has a precise sugar residue for bottle fermentation
Ageing: Refined on the yeasts at the end of the bottle fermentation. Unfiltered, it has sediment at the bottom which does not affect the quality of the wine but gives it a unique feature.
Pairing: Starters, salumi, fish (serve chilled)
